Well, Hall and Elarica Johnson explained the cause of dealy. As we know, coronavirus had paused everything for a while. P-Valley is no different. The production got delayed due to the global pandemic of coronavirus.
Hall told the Indie Wire in 2020 that the next season will take two years to complete. Hall, during an interview, told The Playlist that the production of the second installment commenced in June 2020.
So, it is obvious that the next installment will premiere somewhere in mid-2022.

The Plot of P-Valley Season 2
The finale episode of season one bought the fans at the edge of their chairs. It concluded on a thought-provoking cliffhanger. Hailey stole the money from her ex-boyfriend Montavius (Cranston Johnson) to save the Pynk from being sold to casino developers who were after it. However, Montavius caught him red-handed, and a fight took place between them behind the curtains, after which there was lots of blood spillover. Hailey ran from there. But what about Montavius? Is he dead? Presumably yes. But season 2 will give the final answer.
On the other hand, Hailey managed to save the club. Though the showrunner has not unveiled the storyline of season 2, she has hinted towards it by sharing few details with Entertainment weekly.
She shared that now Haley shared half ownership of the club with Uncle Clifford. Now, the powers have altered. It will be interesting to see the fight between Uncle Clifford and Hailey for the throne(The Pynk).
